Caption on the back of the photograph reads, “All metals used in the preparation and canning of foods must meet a prescribed standard of quality. Metals from every new piece of equipment, even a small valve, are tested. Here a technician is shown dissolving a sample of metal in concentrated acid, preparatory to making an analysis. This is only one of the many steps required in determining the usefulness of certain metals.” The Quality Control Department at H.J. Heinz Company had its beginnings in 1912 when Howard Heinz hired Herbert N. Riley, one of the company’s first bacteriologists. Riley began to apply scientific methods to the processing, preservation, and production of food. Eventually, in 1918, these methods were moved from a laboratory environment into the factory line. All the documentation related to these procedures and methods was written in code and kept locked in a safe. According to Riley, Heinz may have been the first United States company to coin the term “quality control department.”
